Ferrán Adriá: The Last of the Magicians

I´ve seen  Ferrán Adriá three times in my life. The first in a Google video when Adrià was visiting Google Plex. The second in a Documentary done at el Bulli and the third one IN PERSON during Lo Mejor de la Gastronmia XII Congress in Spain.

The three times I´ve seen Ferrán Adrià, two in a documentary and  one in real life, I´ve felt the same: a smooth élan vital entering my mind and body that told my in no words that Creativity is real and has no limits.

Seeing Ferrán Adriá in action is to adopt an holistic perception of live. Everything may seem anarchic but, oh boy, everything is perfection. Connections, links to live, perceptions, the five senses moving in a quantum gastronomic universe, flavors, smells, sounds,  sight, the whole Universe is conspiring in his favor.

To understand el Bulli and Ferrán Adrià is not an essay matter, in fact, to understand his world is out of question. We can only intuit the creativity, there are no facts.

And this exceptional way of behaving and working brings the whole gastronomical world down to his feet because everything he does is tested, analyzed, detailed and programmed but it is exposed, presented as something easy to attain and obtain.

For me Ferrán Adriá is an Alchimist but more than an Alchimist he is an Anarchist and this is the reason why Spanish Haute Cuisine has reached a point of no return thanks to Ferrán Adriá and his School. The cooks from the North are still mumbling.
